Ambiance restaurant Polokwane now open in the evenings

, the popular restaurant in Rabe Street, will be open in the evenings as from 1 April 2009.

Restaurateur Andre Brown (left), previously from Pebbles Restaurant, is the new owner of Ambiance and he has quite a few exciting ideas which he wants you to come and experience.

Andre is obviously proud of his restaurant and says the best about Ambiance is that it nestles in a healthy green garden, is tranquil and he runs an extremely clean restaurant. The food at Ambiance are prepared in a specific way that complies with Andre's standards. Prepared food are kept to a minimum and as much as possible is prepared fresh.

Menu

Andre defines his menu as a relaxed café menu during the day and a refined passionate menu in the evenings.

It is the evening menu that is going to be a bit different from what Polokwaneans are used to. The evening menu could be called Freshest Choice as Andre will choose the freshest meat, chicken, fish and vegetables he can get on the day, and those four will form the basis of the Freshest Choice menu every evening. The evening menu will therefore contain only 12 dishes - four starters, four main dishes and four desserts.

The waiters will announce the dishes of the evening when you arrive. However, if you do not want to be part of this adventure, you will be allowed to insist on what you have been eating the last 400 years and Ambiance's chef will prepare that for you. The only condition is that Ambiance must have it in stock, whatever it is that you want to repeat.

"I will endeavour to serve whatever the patron wants" André says, "but I will not serve old food. If I do not have fresh ingredients of the choice of the patron, we will not be able to comply with his request". It sounds like an exciting idea and it can be expected that adventurous Polokwaneans will flock to Ambiance to be part of the fun. "We will serve good food that takes time to prepare properly, but it will be worth it", says André. "We will not deep fry everything just to be able to serve it within 10 minutes".

André is excited about the new initiative and says the limited menu will allow for more passion in the kitchen, because the chef can concentrate on a limited number of dishes. "Food is art" says André, "and I invite all Polokwaneans to come and try something else for a new experience."

* Hours: From 08:00 on weekdays and 09:00 on weekends. On weekdays the kitchen closes at 21:00 and over weekends at 14:00.
